Homemade muesli bars

Ingredients (serves 10):

  • 2tbsp honey

  • 1tsp vanilla extract

  • 2tbsp Nuttelex spread

  • 1.5 cups rolled oats

  • ½ cup nuts (almonds, cashews, walnuts – roughly chopped)

  • ½ cup seeds (chia, hemp, flaxseed, pumpkin seeds)

  • 1/3 cup sultanas

  • 1/3 cup whole meal flour/almond meal

  • 4tbsp low fat milk

  • 2tsp cinnamon (ground)

  • 1 egg (beaten)

  • 100g dark chocolate

Method:

1. Preheat oven to 180°C. Line a 20cm square baking tin with baking paper.

2. Melt margarine, honey and vanilla essence in the microwave or in a small saucepan on low heat. Combine all ingredients in a large bowl. Press into baking tray and bake for 20 minutes or until golden.

3. Melt the dark chocolate in the microwave.

4. Allow to cool completely then drizzle the dark chocolate over the top of the bars. Allow chocolate to set in the fridge then slice into bars and store in a Tupperware container in the fridge.
