Summer Salad
Ingredients:
50g haloumi
1tsp extra virgin olive oil
¼ medium cucumber
¼ cup cherry tomatoes
1 cheek mango
¼ red onion
¼ avocado
1 cup lettuce (chopped)
1tbsp coriander (fresh or dried)
2tbsp plain Greek yoghurt
1tbsp lime juice
1/2tsp Dijon mustard
Method:
1. Slice halloumi and grill on a frying pan that's been lightly coated with olive oil. Once cooked, set aside.
2. Prepare the salad by dicing the cucumber, halving the tomatoes, thinly slicing the mango, onion and avocado, and chopping the lettuce and coriander. Once chopped, add to a large bowl.
3. Combine dressing ingredients - yoghurt, lime juice and mustard.
4. Add the halloumi to the salad, drizzle with dressing and serve.
