Low-carb Chocolate Cake

Ingredients:

  • ½ cup Cocoa powder

  • ½ cup Boiling water

  • 2/3 cup sweetener (Natvia/Stevia/monk fruit)

  • ¾ cup extra virgin olive oil

  • Three Eggs

  • 150g Almond meal

  • 1/2tsp baking soda

  • 1 tsp vanilla essence

Method:

1. Preheat oven to 170°C and line and grease a round cake pan.

2. Whisk together cocoa powder, boiling water, and sweetener in a bowl.

3. Add the vanilla essence and combine.

4. In another bowl, beat eggs for about 3 minutes until the mixture is pale yellow and thick.

5. Add oil to egg mixture and mix until combined.

6. Add almond meal, baking soda and cocoa mixture until combined.

7. Pour into cake pan and bake for 30-40 minutes.

8. The sides will be set and the centre will look slightly damp. Let cool in the pan for 10 minutes before serving.
