Mongolian Turkey
Mongolian Turkey (serves 1)
Ingredients:
· 1/2tbsp fish sauce
· 1tsp rice vinegar
· 1tsp sesame oil
· 1/2tbsp extra virgin olive oil
· 125g raw turkey mince
· ¼ medium white onion
· ¼ medium red capsicum
· ½ cup carrot (grated)
· ¼ cup uncooked brown rice
· 1 spring onion
Method:
1. Add the fish sauce, rice vinegar and sesame oil to a bowl and whisk until well combined. Set aside until ready to use.
2. Heat the olive oil over medium-high heat and add the turkey mince, breaking the mince into smaller pieces using a spatula/wooden spoon.
3. Allow the mince to brown on one side for 2 minutes, then flip and allow it to brown another 2 minutes.
4. Add the chopped red onion, capsicum, and carrots. Cook, stirring often until vegetables begin to soften, about 2 minutes.
5. Add the sauce and bring the mixture to a full boil. Continue cooking, stirring constantly, until the sauce is mostly absorbed, and the mince is cooked through.
6. Cook the rice as per the packet instructions, and serve with the Mongolian mince freshly chopped spring onion and enjoy!
