Vegetarian Stuffed potato
Vegetarian Stuffed Potato (serves 1)
Ingredients:
· 1 large potato
· 1tbsp extra virgin olive oil
· Pinch of salt and pepper
· 1tbsp baked beans
· ¼ cup baby spinach
· ¼ zucchini
· ¼ red capsicum
· ¼ cup grated light cheese
· 1tbsp sour cream or Greek yoghurt
Method:
1. Pierce the whole potatoes all over with a fork to penetrate the outer layer. Then rub with half of the oil and season with salt and pepper. Bake in the oven for 45 minutes (at 180 degrees celsius), before removing from the oven. Cut a vertical wedge in each potato and scoop out the middle and set aside.
2. Heat beans in a frying pan with oil, before adding in the leaves, grated zucchini, diced capsicum and scooped-out potato. Spoon the ingredients from the frying pan into the hollowed-out potato, then sprinkle with cheese.
3. Let the cheese melt before adding a dollop of sour cream and seasoning with pepper to serve.
