Baked Mushroom & Parmesan Omelette

Ingredients: serves 4

  • 2 cups cherry tomato

  • 4 cups mushrooms

  • 1tbsp extra virgin olive oil

  • 8 eggs

  • 2 cups snow peas

  • 2tbsp parmesan cheese

Method:

1. Preheat oven to 200°C.

2. Place cherry tomatoes and mushrooms in a baking dish, drizzle with oil, and bake for 15 minutes.

3. Whisk eggs in a bowl, then pour over roasted vegetables.

4. Sprinkle with peas and cheese, then bake for 10-12 minutes until set.
