Falafel Pita with Salad

 

Ingredients:

  • ½ tomato

  • ¼ red capsicum

  • ½ Lebanese cucumber

  • ¼ red onion

  • ½ tbsp parsley

  • 1 x falafel

  • 1 x small pita bread

  • 2tbsp hummus

  • 1 x lemon wedge

Method:

1.    Prepare the salad by dicing the vegetables and parsley, and combining them in a bowl. Divide into portions and refrigerate until ready to serve.

2.    In a small pan over medium heat warm the falafels until crispy on the outside.

3.    When ready to eat, assemble each pita with the warmed falafel, the salad, the hummus and a squeeze of lemon juice.
