Creamy curried egg sandwich

 

Ingredients:

  • 2 x eggs

  • 2tsp curry powder

  • ½ medium avocado

  • 2tbsp sour cream

  • 2 x multigrain bread

  • ½ cup mixed salad

Method (serves 1):

1.    Boil eggs in a pot of boiling water until hard. After 5 minutes, remove from heat and cool under cold water.

2.    Peel and mash eggs with curry powder, avocado, cream and salt and pepper to taste.

3.    Spread egg mix onto the bread, layering with salad leaves. Enjoy!
