Gluten Free Orange and Poppy Seed Cake
Ingredients:
60g olive oil spread
1 cup castor sugar
1tsp vanilla essence
2 eggs
4 egg whites
200g gluten-free low fat Greek yoghurt/vanilla yoghurt
1 cup polenta
1/3 cup orange juice
2tbsp poppy seeds
Method:
In a medium bowl, use a hand mixer to combine the olive oil spread, sugar, and vanilla essence.
Add eggs and egg whites, one at a time, continuing to mix with hand mixer.
Add yoghurt, polenta, and orange juice. Beat well for further 2 minutes. Add in poppy seeds and stir through with a spatula.
Pour into greased cake tin.
Bake in the oven at 160°C for 40 to 50 minutes or until golden brown.
