Gluten Free Orange and Poppy Seed Cake

 

Ingredients:

  • 60g olive oil spread

  • 1 cup castor sugar

  • 1tsp vanilla essence

  • 2 eggs

  • 4 egg whites

  • 200g gluten-free low fat Greek yoghurt/vanilla yoghurt

  • 1 cup polenta

  • 1/3 cup orange juice

  • 2tbsp poppy seeds

Method:

  1. In a medium bowl, use a hand mixer to combine the olive oil spread, sugar, and vanilla essence.

  2. Add eggs and egg whites, one at a time, continuing to mix with hand mixer.

  3. Add yoghurt, polenta, and orange juice. Beat well for further 2 minutes. Add in poppy seeds and stir through with a  spatula.

  4. Pour into greased cake tin.

  5. Bake in the oven at 160°C for 40 to 50 minutes or until golden brown.
