Vegan Bolognaise
Ingredients:
1 x garlic clove
¼ brown onion
1 x celery stick
1 x medium carrot
1/5 zucchini
1tsp extra virgin olive oil
1tsp mixed herbs
½ tbsp tomato paste
125mL Plain Passata sauce
½ can lentils
125g uncooked wholemeal pasta
1.5tbsp fresh basil
Method (serves 1):
1. Prepare ingredients: - Vegetables = crush the garlic clove, and finely dice the onion, celery, carrot and zucchini.
2. Lightly coat a medium-sized fry pan with oil. Sautee onions and garlic over medium-high heat until the onion is translucent. Add other diced vegetables and cook down for 2 minutes. Add the drained lentils.
3. Add mixed herbs, tomato paste and passata. Stir to combine. Bring to a boil and then reduce to a simmer for approximately 15 minutes or until all vegetables are tender. Season with pepper.
4. Meanwhile, cook spaghetti in a separate pot of boiling water as per the instructions on the packet. Drain once cooked.
5. Once the Bolognese is cooked, stir through the pasta and garnish with basil. Enjoy!
