Caprese pasta salad

 

Ingredients:

  • 60g protein pasta (e.g., Vetta protein pasta)

  • 4 x cherry tomato

  • 3tbsp fresh basil chopped

  • 2 slices red onion

  • 40g low fat mozzarella cheese

  • 1tbsp balsamic vinegar

  • 1tbsp extra virgin olive oil

  • 1tsp Dijon mustard

Method: (serves 1)

1.    Prepare pasta as per packet instructions. Set aside to cool once cooked and drained.

2.    Whilst pasta is cooking, slice the cherry tomatoes and basil leaves in half. Then roughly slice the red onion and mozzarella cheese. Set aside.

3.    Now to prepare the vinaigrette by combining the vinegar, oil and mustard in a separate bowl, whisking until combined.

4.    To a serving bowl, combine the pasta, sliced cheese and vegetables and vinaigrette. Toss everything through until the pasta has been evenly coated with dressing.

5.    Serve and enjoy!
