Tabbouleh with Quinoa and Chickpeas

 

Ingredients:

  • ½ medium tomato

  • ½ small Leabese cucumber

  • 1tbsp fresh parsley (chopped)

  • 2 garlic cloves

  • ½ cup quinoa (uncooked)

  • 2tsp extra virgin olive oil

  • ½ cup drained chickpeas

  • 2tsp lemon juice

Method: (serves 1)

1.    Dice the tomato and cucumber, roughly chop the parsley, and finely grate the garlic.

2.    Cook the quinoa according to packet instructions.

3.    Combine the cooked quinoa with all other ingredients, also add some mint if available, toss well and refrigerate until required.
