Balsamic Bruschetta

 

Ingredients (serves 1):

1 tomato

¼ red onion chopped

¼ cup fresh basil chopped

1tbsp extra virgin olive oil

1/2tbsp balsamic vinegar

2 eggs

2 x multigrain sourdough

½ avocado

Method:

  1. Dice tomato, onion and basil, then mix together.

  2. Drizzle with oil and balsamic vinegar.

  3. Poach the eggs on the stove top in some water, or alternatively fry with a dash of oil.

  4. Toast the bread and spread 1/4 of an avocado over each slice.

  5. Serve by topping the toast with tomato, onion & basil mixture, then place the egg on top to serve. Season with salt & pepper if desired.
