Tropical Chia Pudding

 

Ingredients: serves 4-6

·       ½ cup chia seeds

·       2 cups coconut milk (or almond milk)

·       1 cup diced mango or pineapple

·       2 tsp shredded coconut per serving

Method:

  1. Mix chia seeds with milk and a little honey, let sit in fridge for 2–3 hours or overnight.

  2. Top with fresh tropical fruits and coconut before serving.
