Pumpkin and Blueberry Pikelets

Ingredients:

  • 1 egg

  • ½ cup wholemeal flour

  • ½ tsp baking powder

  • ½ tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ cup low fat milk

  • ½ tsp vanilla extract

  • ¼ cup diced pumpkin

  • ½ cup frozen blueberries

  • ¼ cup low fat plain yoghurt

Method: (serves 1)

1. In a 180 degrees Celcius oven, cook the pumpkin for 20 minutes.

2. In a large bowl, combine all dry ingredients. In another bowl, whisk the milk, eggs, vanilla and pumpkin. Pour the wet mixture into the dry ingredients, and stir to combine. Stir the blueberries gently through.

3. Over medium heat, spray a frying pan with oil. Pour large spoonfuls of the mixture and cook until bubbles appear. Flip and cook the other side for 1-2 minutes. Repeat this process with the rest of the mixture.

4. Serve with a dollop of yoghurt and some extra blueberries. Enjoy!
