Salmon and Greens in Teriyaki Glaze

 

Ingredients (serves 1):

  • 150g salmon fillet

  • 1tbsp teriyaki sauce

  • 1tsp extra virgin olive oil

  • 50g dry rice noodles

  • ½ packet frozen mixed stir fry vegetables

  • ½ cup Bok Choy

Method:

  1. Begin by marinating the salmon fillets in teriyaki sauce.

  2. Heat oil in a large frying pan and lightly cook the marinated salmon until just done.

  3. In a separate pot, cook the rice noodles as per packet instructions and set aside.

  4. Steam the mixed vegetables until they are just tender.

  5. Serve the cooked salmon on a bed of rice noodles, accompanied by the steamed mixed vegetables.
