Salmon and Greens in Teriyaki Glaze
Ingredients (serves 1):
150g salmon fillet
1tbsp teriyaki sauce
1tsp extra virgin olive oil
50g dry rice noodles
½ packet frozen mixed stir fry vegetables
½ cup Bok Choy
Method:
Begin by marinating the salmon fillets in teriyaki sauce.
Heat oil in a large frying pan and lightly cook the marinated salmon until just done.
In a separate pot, cook the rice noodles as per packet instructions and set aside.
Steam the mixed vegetables until they are just tender.
Serve the cooked salmon on a bed of rice noodles, accompanied by the steamed mixed vegetables.
