Mango, Halloumi & Quinoa Salad with Lime-Chili Dressing

 

Ingredients: serves 1

  • Β½ cup quinoa, cooked and cooled

  • 1 mango, diced

  • 100g halloumi, grilled or pan-fried

  • Β½ red capsicum, finely sliced

  • Β½ cucumber, diced

  • ΒΌ red onion, finely sliced

  • 1 handful fresh mint & coriander

  • Juice of 1 lime

  • 1tbsp olive oil

  • Β½ tsp chili flakes (optional)

Method:

  1. Combine quinoa, mango, capsicum, cucumber and onion in a bowl.

  2. Top with grilled halloumi and herbs.

  3. Whisk lime juice, olive oil, and chili flakes together and drizzle over salad.

  4. Serve warm or cold.
