Mango, Halloumi & Quinoa Salad with Lime-Chili Dressing
Ingredients: serves 1
Β½ cup quinoa, cooked and cooled
1 mango, diced
100g halloumi, grilled or pan-fried
Β½ red capsicum, finely sliced
Β½ cucumber, diced
ΒΌ red onion, finely sliced
1 handful fresh mint & coriander
Juice of 1 lime
1tbsp olive oil
Β½ tsp chili flakes (optional)
Method:
Combine quinoa, mango, capsicum, cucumber and onion in a bowl.
Top with grilled halloumi and herbs.
Whisk lime juice, olive oil, and chili flakes together and drizzle over salad.
Serve warm or cold.
