Grilled Peach & Burrata Flatbread

 

Ingredients:

  • 1 wholegrain or sourdough flatbread

  • 1 ripe peach, sliced

  • 1 ball burrata or mozzarella

  • Handful rocket or baby spinach

  • 1tbsp balsamic glaze

  • 1tsp honey

  • Cracked pepper

Method:

  1. Lightly grill peach slices until caramelised.

  2. Warm the flatbread, then layer with rocket, peaches, and torn burrata.

  3. Drizzle with honey and balsamic glaze, season with pepper.

  4. Slice and enjoy as a light lunch or starter.
