Grilled Peach & Burrata Flatbread
Ingredients:
1 wholegrain or sourdough flatbread
1 ripe peach, sliced
1 ball burrata or mozzarella
Handful rocket or baby spinach
1tbsp balsamic glaze
1tsp honey
Cracked pepper
Method:
Lightly grill peach slices until caramelised.
Warm the flatbread, then layer with rocket, peaches, and torn burrata.
Drizzle with honey and balsamic glaze, season with pepper.
Slice and enjoy as a light lunch or starter.
