GF Quinoa Porridge

 

GF Quinoa Porridge

This one is for our Coeliac and Gluten-Intolerant friends (and for anyone looking for a way to switch up traditional porridge!). As the weather cools down there’s nothing better than a warm bowl of porridge in the morning – try out this quinoa-based alterative!

Ingredients (serves 1):

  • ¼ cup uncooked quinoa

  • ½ cup water

  • ½ cup milk of choice

  • ½ medium banana

  • 1/2tsp ground cinnamon

  • 1 tbsp LSA

  • ¼ vanilla bean pod OR 1/2tsp vanilla bean extract

  • ½ cup blueberries (fresh or frozen)

  • 30g walnuts

Method:

1.    Rinse quinoa under cold running water. Combine the water in a pot and bring to a boil. Reduce the heat - cover and cook for 10 minutes until soft.

2.    Add milk, banana, cinnamon, LSA and vanilla. Cook for 5 minutes until creamy - add more milk if needed for a creamier texture.

3.    Spoon into serving bowls, and sprinkle with walnuts and blueberries. Enjoy.
