Falafel Kebab
Ingredients: (serves 1)
75g Yumi’s classic falafel
2 medium lettuce leaves
¼ red onion
½ medium tomato
1 x multigrain wrap or wholemeal pita bread
¼ avocado
1 tbsp tzatziki dip
1 tbsp BBQ sauce (low sugar low salt version)
Method:
1. Prepare filling ingredients by halving the falafel, washing the lettuce and slicing the onion and tomato.
2. Lay wrap onto cutting board or plate and spread with avocado and tzatziki dip.
3. Layer filling ingredients in the centre of the wrap.
4. Fold the bottom and sides of the wrap.
5. Lightly spray a pan with extra virgin olive oil spray and heat to medium-high heat.
6. Place wrap in a pan for 2-4 minutes on both sides or until golden brown. Enjoy!
