Satay Chicken Rice Paper Rolls

Ingredients: (serves 4)

  • 500g chicken breast (raw)

  • 4 tbsp extra virgin olive oil

  • 1 x cup carrot (grated)

  • 1 x cucumber (sliced)

  • 1 x cup cabbage (shredded)

  • 16 x sheets rice paper

  • 1 x cup bean sprouts

  • 2 tbsp sweet chili sauce

  • 300mL satay sauce (NOTE: can use bought or make your own!)

 

Homemade satay sauce:

  • ½ cup natural peanut butter

  • 3 tbsp soy sauce

  • 1 tbsp rice wine vinegar

  • 2 tbsp hot water

  • 1 tsp garlic powder

  • 1/2 tsp crushed ginger

  • 1 tbsp sesame oil

  • 1 tbsp maple syrup

 

Method:

1. Add sliced chicken to a frying pan coated with olive oil. Cook over medium-high heat until chicken is cooked through and lightly browned. Add in the bottle of satay sauce and bring to a boil for 4-5 minutes. Remove from heat and set aside.

2. Grate carrot, slice cucumber into thin strips and thinly shred the cabbage.

3. Moisten rice paper one at a time in warm water until translucent.

4. Assemble vegetables and satay chicken at one end of the rice paper, fold in sides and roll. Repeat with remaining wraps and filling

5. Enjoy rice paper rolls dipped into sweet chilli sauce.
