Fake-away: BBQ Chicken Pizza

 

BBQ Chicken Pizza (serves 2)

Introducing our new series - Fake-away! Satisfy those cravings for some fast food without sacrificing good nutrition. We will be providing 5 new recipes each week with a healthy spin on popular fast-food. You may be surprised that not only do they taste fantastic, they also leave you feeling fantastic as well!

Ingredients:

  • 240g cooked chicken breast (shredded)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 3 tbsp BBQ sauce

  • 1 small red onion (diced)

  • 1 small zucchini (sliced)

  • 1 Woolies high protein lower carb pizza base

  • 2 tbsp tomato paste (salt reduced)

  • ½ cup low fat mozzarella cheese (grated)

  • 1 cup cherry tomatoes

  • 1 cup baby spinach

  • 1 tsp extra virgin olive oil (Cobram garlic infused)

  • 2 tsp balsamic vinegar

Method:

1. Set oven to 200°C. Line two baking trays with baking paper. (NOTE: you can also cook the pizza in the air fryer – set to 180°C).

2. Take shredded BBQ chicken and season with garlic powder, smoked paprika and 2 tbsp of BBQ sauce. Stir to combine and set aside.

3. Prepare vegetables by peeling and dicing onion. Use a vegetable peel to peel ribbons, lengthwise down the zucchini. Set vegetables aside.

4. Place pizza base on pre-lined baking trays (NOTE: if using the air fryer – line base of air fryer with baking paper). Top with a thin spread of tomato paste.

5. Add a thin layer of zucchini ribbons to the bottom of the pizza. Top with BBQ chicken and sprinkle diced red onion and cheese evenly over pizza.  

6. Bake pizza in preheated oven for 12-15 minutes or until bases are crisp and cheese is slightly golden. Drizzle remaining BBQ sauce over cooked pizzas. (NOTE: if using the air fryer – bake for 10-12 minutes or until bases are crisp and cheese is golden brown).

7. Meanwhile, prepare side salad by placing salad leaves in a mixing bowl and adding diced tomatoes. Toss to combine with garlic infused olive oil and balsamic vinegar.

8. Serve slices of pizza with the side salad. Enjoy!
