Cheesy Fritters

This recipe is great for meal prepping for breakfast, lunch and dinners and is super versatile. Give it a try and let us know what you pair them with in the comments!

Ingredients: (serves 2)

  • 2 large eggs

  • 1 cup ricotta cheese (reduced fat)

  • ½ cup grated parmesan cheese

  • 1 tbsp wholemeal flour

  • 2 tbsp fresh chives

  • 1 medium grated zucchini

  • 1 tbsp extra virgin olive oil

  • 2 small tomatoes

  • ½ avocado

  • 1 cup rocket leaves

Method:

1. Put the yolks, ricotta, parmesan, flour and chives into a bowl. Season with salt and black pepper and mix everything together well. Add grated zucchini, however, squeeze any fluid from the zucchini in a colander then pat with a paper towel.

2. Whisk the egg whites until the mixture stands in soft peaks. Fold a spoonful of the beaten egg whites into the ricotta mixture to loosen it, then fold in the remaining egg whites.

3. Heat the oil in a frying pan over medium heat. Using a dessert spoon, drop 3 or 4 spoonfuls of the batter into the pan. Once the fritters are golden on one side turn them over and cook for 1-2 min on the other side. Remove from the pan and place on a heated plate to keep warm.

4. Divide fritters between plates to serve. Add a side salad of tomatoes, avocado and some rocket leaves.
