Chickpea and fetta burgers

 

Ingredients:

  • 1 cup chickpeas (drained)

  • 2tbsp chives

  • 1 x carrot

  • ¼ cup fetta

  • 1 egg

  • Pinch salt

  • Pinch pepper

  • ¾ cup bread crumbs

  • 2tsp psyllium husk/almon meal

  • 1tbso extra virgin olive oil

  • 8 slices sourdough bread

  • 2 x tomato

  • 2tbsp coriander

  • 1 cup baby spinach

  • 4tbsp sweet chili sauce

Method: (serves 4)

1.    Place chickpeas, chives, grated carrot, feta and egg in a food processor and whizz until combined. Transfer the mixture to a bowl and season with salt & pepper. Add bread crumbs and Kfibre and mix well. Shape into patties.

2.    Heat oil in a pan or on the BBQ over medium heat. Cook patties for 4 minutes on each side until golden and cooked through.

3.    Serve by layering patty, sliced tomato, coriander, spinach and sweet chilli sauce on the bun. Enjoy!
