Dark Chocolate, Black Bean & Berry Brownies
Ingredients: (serves 4)
2tbsp extra virgin olive oil
2tbsp sugar free maple syrup
50g dark chocolate
½ tin back beans (drained)
1/2tsp baking powder
1 egg
100g strawberries
Method:
Preheat oven to 160°C. Line a mini square cake tin (10cm) with baking paper OR 4 cupcake holes with wrappers.
Place the oil, maple syrup and dark chocolate in a microwave safe bowl. Heat for 1-2 minutes, pausing every 30 seconds to stir the chocolate mixture. Once fully melted and combined without lumps, allow the mixture to cool slightly.
Blend the drained black beans in a food processor. Add baking powder, eggs and chocolate mixture. Blend until combined.
Pour brownie mixture into prepared tins. Slice strawberries and evenly arrange on top.
Bake for approximately 20minutes or until inserted skewer comes out clean.
Divide into serves and enjoy!
