Baked Feta and Turkey Meatballs

 

Baked Fetta and Turkey Meatballs:

Try out this delicious twist on spaghetti and meatballs! Feel free to use whatever pasta your would like. For an extra hit of protein, try out the San Remo Pulse pasta (also high in fibre!) or the Vetta protein pasta spirals. For a lower carb option, try out the Slendier brand, Konjac noodles, or zucchini spirals.

Ingredients: (serves 4)

  • 500g turkey breast mince

  • 1 tbsp dried oregano

  • 1 tbsp fetta cheese

  • 1 large egg

  • ¼ cup almond meal flour

  • 1 tsp extra virgin olive oil

  • 700g passata sauce

  • 1 cup mushrooms

  • 1 cup baby spinach

  • 1 cup broccoli

  • 200g uncooked pasta of choice

  • 1 cup grated parmesan cheese

Method:

1. Combine turkey mince, dried oregano, feta cheese, egg and almond meal. Mix well. Roll into meatballs and place in the fridge for 30 mins.

2. Place meatballs into greased (with olive oil) baking dish and pour passata over the meatballs.

3. Finely dice mushrooms, spinach and broccoli. Add to baking dish.

4. Bake for 20-25mins or until meatballs are cooked through.

5. Meanwhile,  cook pasta based on individual packet instructions.

6. Remove meatballs from the oven and gently stir. Serve with pasta and finish with parmesan cheese.
