Savoury Turmeric Omelette Wraps with Greens & Feta

 

Ingredients:

  • 2 eggs (can also add in ΒΌ cup of egg whites for extra protein)

  • 1 tsp turmeric + pinch black pepper

  • 1 cup baby spinach

  • ΒΌ cup crumbled feta

  • 1 tsp olive oil

  • Optional: cherry tomatoes

Method:

  1. Whisk eggs with turmeric, pepper, and a splash of water.

  2. Heat olive oil in a pan, add spinach until wilted.

  3. Pour in eggs and cook like a thin omelette.

  4. Sprinkle feta and fold over.

  5. Serve with fresh tomatoes or salmon on top.
