Mee Goreng

 

Mee Goreng (serves 2)

Ingredients:

- 30mL Kecap manis

- 20mL oyster sauce

- 15mL soy sauce

- 10mL tomato sauce

- 300g chicken breast (raw weight)

- 150g instant noodles

- 300g cabbage

- 2 carrots (shredded into ribbons or grated)

- 1 zucchini (grated or shredded into ribbons)

- 4 spring onions

- 150g snow peas

- Extra virgin olive oil

Method:

1. In a medium bowl, add the kecap manis, oyster sauce, soy sauce and tomato sauce.

2. Slice the chicken into bite sized pieces and add to the bowl and stoior to combine in the marinade. Cover and set aside in the fridge to marinate (you can do this overnight also).

3. Shred the cabbage, zucchini and carrot and roughly chop the sring onions and snow peas.

4. Bring a pot of water to the boil and add in the instant noodles (cook to packet instructions). Drain and set aside.

5. Place a frying pan over high heat and add in the extra virgin olive oil (about 2tsp). Once hot add in the chicken and marinade. Cook until chicken is just cooked through. Add cabbage, carrot, and zucchini as well as the spring onions and snow peas. Cook for about 2-3 minutes. Add in the cooked noodles and stir to combine. Serve and enjoy.
