Mediterranean Salad

Try out this delicious Mediterranean-Style salad. This salad is high in protein, low GI, and has a bunch of anti-inflammatory ingredients throughout. Comment any new recipes your would like to see below.

Ingredients (serves 1):

  • 1/3 cups uncooked quinoa

  • 1.5 cups baby spinach

  • 6 medium olives

  • 5 Cherry tomatoes

  • 2 slices canned beetroot

  • 1tbsp fetta cheese

  • 120g cooked chicken breast OR 1 fillet of fresh salmon OR 90-110g tin of tuna in fresh water/olive oil

Method:

1.    Cook the quinoa as per packet instructions. Once cooked, set aside to cool.

2.    Add the baby spinach, olives, cherry tomatoes, and sliced beetroot to a bowl or container.

3.    Shred or dice the chicken breast and add to the salad followed by the cooked quinoa. Toss gently to mix the ingredients.

4.    Crumble over the feta to serve.
