Lemon & Herb Baked Salmon with Roast Vegetables

 

Ingredients (serves 2–4)

  • 2–4 salmon fillets

  • 1 lemon (zest + juice)

  • 2tbsp extra virgin olive oil

  • 1-2 cloves garlic, crushed

  • Fresh dill or parsley, chopped

  • 500g mixed vegetables (pumpkin, zucchini, red onion, capsicum)

  • Black pepper

Method

  1. Preheat oven to 180°C.

  2. Place vegetables on a tray, drizzle with half the olive oil and pepper. Roast for 25–30 minutes.

  3. Place salmon on a lined tray. Brush with remaining olive oil, lemon zest, garlic and herbs.

  4. Bake salmon for 12–15 minutes or until just cooked.

  5. Finish with a squeeze of lemon juice and serve with roasted vegetables.
