Lemon & Herb Baked Salmon with Roast Vegetables
Ingredients (serves 2–4)
2–4 salmon fillets
1 lemon (zest + juice)
2tbsp extra virgin olive oil
1-2 cloves garlic, crushed
Fresh dill or parsley, chopped
500g mixed vegetables (pumpkin, zucchini, red onion, capsicum)
Black pepper
Method
Preheat oven to 180°C.
Place vegetables on a tray, drizzle with half the olive oil and pepper. Roast for 25–30 minutes.
Place salmon on a lined tray. Brush with remaining olive oil, lemon zest, garlic and herbs.
Bake salmon for 12–15 minutes or until just cooked.
Finish with a squeeze of lemon juice and serve with roasted vegetables.
