Garlic Chicken & Sweet Potato Tray Bake
Ingredients (serves 4)
600-700g chicken thighs or breasts
2 medium sweet potatoes, cut into wedges
1 head broccoli, cut into florets
1 red onion, sliced
2tbsp extra virgin olive oil
2 cloves garlic, crushed
1tsp paprika
1tsp dried thyme or oregano
Black pepper
Lemon wedges, to serve
Method
Preheat oven to 190°C.
Place chicken and vegetables on a large tray.
Drizzle with olive oil, add garlic, paprika, herbs and pepper. Toss well.
Roast for 35–40 minutes, turning once.
Serve with lemon squeezed over the top.
