Garlic Chicken & Sweet Potato Tray Bake

 

Ingredients (serves 4)

  • 600-700g chicken thighs or breasts

  • 2 medium sweet potatoes, cut into wedges

  • 1 head broccoli, cut into florets

  • 1 red onion, sliced

  • 2tbsp extra virgin olive oil

  • 2 cloves garlic, crushed

  • 1tsp paprika

  • 1tsp dried thyme or oregano

  • Black pepper

  • Lemon wedges, to serve

Method

  1. Preheat oven to 190°C.

  2. Place chicken and vegetables on a large tray.

  3. Drizzle with olive oil, add garlic, paprika, herbs and pepper. Toss well.

  4. Roast for 35–40 minutes, turning once.

  5. Serve with lemon squeezed over the top.
