Protein loaded toast

 

(Serves 1)

Ingredients:

2 slices high-protein or wholegrain bread

½–¾ cup low-fat cottage cheese

80–100g cooked chicken breast (shredded or sliced)

Baby spinach or rocket

Cracked pepper and herbs of choice for flavour

Method:

1. Toast bread, spread cottage cheese thickly, top with warm chicken and greens, season to taste.
