DIY Rice Paper Rolls
Serves: 4-6
Ingredients:
Filling:
o 16 x sheets of round rice paper
o 4 x ice-berg lettuce leaves, shredded
o 50g snow pea sprouts, trimmed
o 1 x carrot, peeled, cut into short, thin sticks
o 1 x Lebanese cucumber, cut into short, thin sticks
o 2 cups of chicken, shredded
o 1 x mango, peeled, cut into short strips
o 60g unsalted, roasted cashews, chopped
Dipping sauce:
Option A:
o 1/3 cup sweet chilli sauce
o 1 lime, juiced
Option B:
o ¼ cup soy sauce
o 2 tablespoon rice wine vinegar OR apple cider vinegar
o 4cm piece fresh ginger, peeled, finely grated
o 2 teaspoons caster sugar
o ½ teaspoon seasame oil
***To get the whole family involved, once all the ingredients are prepped and ready to roll, lay them out on the dining room table so everyone can make their own rolls***
Method:
Making dipping sauce A: combine sweet chilli sauce and 2 tablespoons of lime juice in a bowl. Set aside. Making dipping sauce B: Place soy sauce, vinegar, ginger, sugar and seasame oil in a small bowl. Stir until sugar as dissolved. Set aside.
Half fill a shallow dish with warm water. Dip 1 rice paper sheet into water. Place on bench and pat dry with paper towel. Stand for 20-30 seconds or until sheet is soft enough to roll without splitting.
Place lettuce along 1 edge of rice paper. Top with sprouts, carrot, cucumber, chicken, mango and cashews. Fold in edges and roll up to enclose filling. Cover with a damp tea towel. Repeat with remaining ingredients and rice sheets. Serve with dipping sauce.
