Cheeseburger Pasta

 

Cheese Burger Pasta (serves 4)

Ingredients:

- 500g extra lean beef mince

- ½ brown onion

- 2 x baby carrot

- 2 x celery sticks

- 2tbsp extra virgin olive oil

- 1tsp garlic powder

- 1tsp ground paprika

- Salt and pepper to taste

- 350mL salt reduced beef stock

- 400g tin Italian Crushed tomato + mixed herbs

- 250g (dry weight) Vetta protein pasta

- 100g low fat mozzarella cheese

Method:

1. Peel and then dice the onion, carrot and celery into small pieces.

2. In a frying pan on medium-high heat, add in the oil and onion and cook until onion is fragrent and translucent.

3. Add in the beef mince, breaking up with a wooden spoon, until mostly cooked through.

4. Add in the carrot, celery, garlic powder, paprika, salt and pepper and cook for ~10-12 minutes or until the veggies are soft.

5. Add in the beef stock, tinned tomatoes and pasta. Stir to combine. Bring to the boil then reduce to simmer and cover until the past is cooked through (~15-18 minutes). Stir frequently.

6. Add in the cheese and stir to combine then serve.
