Cauliflower Cheese Sauce
CAULIFLOWER CHEESE SAUCE
Serves: 6-8
Ingredients:
o 1 medium cauliflower (leaves cut off), broken into pieces OR 500g bag of frozen cauliflower
o 1 cup chicken stock or vegetable stock
o 2 cups grated cheddar cheese
o 1/2 cup grated parmesan cheese
o 2 teaspoons of dried oregano or other herb of choice
Method:
1. Place cauliflower into shallow microwave-safe dish.
2. Pour stock over cauliflower, cover with plastic wrap and cut slit in the top or use microwave safe lid with an opening, and microwave 7-9 minutes or until cauliflower is fork tender.
3. Allow cauliflower and stock to cool slightly. Pour cauliflower and stock into high powdered blender and puree completely until smooth.
4. Pour puree into pot and place over medium low heat. Sprinkle in cheddar and parmesan cheese and stir to melt to create a sauce.
5. Taste and adjust seasoning with salt and pepper.
6. Freeze leftovers in portioned containers.
TIPS:
- Use a proper blender/food processor rather than a stick blender if you can. This will make the texture creamier/ less lumpy.
- Can substitute some of the cheddar cheese for more parmesan cheese for a stronger flavour
- Use low fat cheddar to save on calories
- Serve with roasted veggies + a lean protein for an easy, quick, healthy and tasty meal.
