Banana Bread Brownies

Ingredients: serves 16

-            60mL extra virgin olive oil

-            120mL maple syrup (can use the sugar free version)

-            2 eggs

-            1 medium banana

-            70mL milk of choice

-            1tsp vanilla extract

-            Pinch of salt

-            1/2tsp ground cinnamon

-            1/2tsp ground nutmeg

-            250g plain flour OR GF flour

-            1tsp bicarbonate soda

-            100g chocolate chips (dark or milk chocolate)

-            1tbsp cacao powder

Method:

1.       Preheat the oven to 175oC fan forced. Line a baking tin for baking paper. In a bowl, mash the banana with the olive oil, maple syrup, vanilla extract, eggs and milk. Whisk to combine.

2.       Add in the flour, bicarb soda, nutmeg and cinnamon. Stir to combine. Transfer ¾ of the mixture into the lined baking tin.

3.       In the remaining mixture add the cacao powder and stir to combine. Pour the remaining mixture into the baking tin. Top with chocolate chips.

4.       Bake in the oven for 40-45 minutes or until a skewer placed in the middle of the brownie comes out clean.
