Summer Christmas Salad with Nectarine, Prosciutto & Burrata

Ingredients:

  • 4 ripe nectarines or peaches, sliced

  • 100 g prosciutto, torn

  • 2 cups mixed salad leaves (rocket, baby spinach, or watercress)

  • 1 cup cherry tomatoes, halved

  • 1 ball burrata or 100 g fresh mozzarella, torn

  • ¼ cup pistachios or walnuts, roughly chopped

  • Fresh basil leaves

Dressing:

  • 2 tbsp extra virgin olive oil

  • 1 tbsp white balsamic vinegar or lemon juice

  • 1 tsp honey

  • Salt & pepper

Method:

  1. Arrange leaves on a large serving platter.

  2. Layer nectarine slices, prosciutto, tomatoes, and burrata.

  3. Sprinkle with pistachios and basil.

  4. Drizzle with dressing just before serving.
