Summer Christmas Salad with Nectarine, Prosciutto & Burrata

Ingredients:
4 ripe nectarines or peaches, sliced
100 g prosciutto, torn
2 cups mixed salad leaves (rocket, baby spinach, or watercress)
1 cup cherry tomatoes, halved
1 ball burrata or 100 g fresh mozzarella, torn
¼ cup pistachios or walnuts, roughly chopped
Fresh basil leaves
Dressing:
2 tbsp extra virgin olive oil
1 tbsp white balsamic vinegar or lemon juice
1 tsp honey
Salt & pepper
Method:
Arrange leaves on a large serving platter.
Layer nectarine slices, prosciutto, tomatoes, and burrata.
Sprinkle with pistachios and basil.
Drizzle with dressing just before serving.
