Savoury Pumpkin Muffins

Ingredients: serves 4

  • 360g pumpkin (peeled, raw weight)

  • 1 cup self raising flour (can use gluten free flour)

  • 4tbsp reduced fat fetta cheese

  • 2 eggs

  • 160mL low fat milk

  • 1tbsp extra virgin olive oil

Method:

1. Preheat the oven to 180°C and grease an 8-hole muffin tray.

2. In a large bowl, combine the grated pumpkin, flour, and cheese

3. Whisk the eggs, milk, and oil in a separate bowl, then pour into the dry ingredients and mix until combined.

4. Divide the batter into the muffin tray and bake for 20–25 minutes, until golden.
