Homemade Mediterranean Pizza

Homemade mediterranean pizza
Serves: 4
Ingredients:
BASE:
o 1.5 cups wholemeal self-raising flour
o 1 cup full fat Greek yoghurt
o Extra flour for kneading
TOPPINGS:
o 1x punnet cherry tomatoes, sliced in half
o ½ cup sliced mushrooms
o ½ cup sliced sun dried tomatoes (drained)
o ¼ cup finely sliced olives
o ¼ sliced red onion
o ½ cup fresh basil leaves or spinach
o 2 tablespoons of pesto or pizza sauce
o 1 tsp of minced garlic or 1 clove garlic, pressed/finely chopped
o 200g fetta, crumbled
o Small handful of grated tasty or mozzarella cheese
Method:
1. Wash and dry hands. Flour a clean bench top and hands.
2. Preheat oven to 180 degrees
3. Roll and knead the flour and yoghurt together until it forms a dough like consistency. Best to knead for ~5-8 minutes.
4. Add water or flour depending on whether the dough is dry or too sticky
5. Roll flat into 2 large pizzas or 4 small pizza’s
6. Spread the dough with garlic and sauce of choice (pesto or pizza sauce)
7. Assemble the pizza with toppings as above with the fetta and cheese last.
TIPS/INFO:
- Sprinkle with toasted pine nuts for additional healthy fats
