Coconut Ginger Veggie Stir-Fry

 

Ingredients:

  • 1 tsp extra virgin olive oil

  • 1 cup mixed veggies (broccoli, capsicum, snow peas)

  • 1 clove garlic + 1 tsp grated ginger

  • 2 tbsp lite coconut milk

  • 1 tsp tamari or soy sauce

  • 1 tsp sesame seeds

  • Optional: add prawns, tofu, or tempeh

Method:

  1. Heat oil, sauté garlic and ginger until fragrant.

  2. Add veggies, stir-fry for 4–5 mins.

  3. Stir in coconut milk and tamari, cook for another 2 mins.

  4. Sprinkle sesame seeds before serving.
