Coconut Ginger Veggie Stir-Fry
Ingredients:
1 tsp extra virgin olive oil
1 cup mixed veggies (broccoli, capsicum, snow peas)
1 clove garlic + 1 tsp grated ginger
2 tbsp lite coconut milk
1 tsp tamari or soy sauce
1 tsp sesame seeds
Optional: add prawns, tofu, or tempeh
Method:
Heat oil, sauté garlic and ginger until fragrant.
Add veggies, stir-fry for 4–5 mins.
Stir in coconut milk and tamari, cook for another 2 mins.
Sprinkle sesame seeds before serving.
