INGREDIENTS

‍ ‍·       300g (2x 150g portions) salmon fillets, raw

‍ ‍·       4 cups mixed salad greens, raw

‍ ‍·       6 medium olives

‍ ‍·       4 cherry tomatoes, sundried

‍ ‍·       2 tsp capers, drained

‍ ‍·       50g artichoke, raw

‍ ‍·       Spice Mix: ½ tsp paprika,  ½ ground, dried ginger, ½ tsp dill, raw

METHOD

‍ ‍1.     Preheat the oven to 200⁰C. Line a tray with baking paper (to wrap the salmon in).

‍ ‍2.     Place salmon fillets on the baking paper and rub dry spice mix into flesh.

‍ ‍3.     Fold the sides and ends of the baking paper, creating a packet. Bake for 20-25 minutes, or until the salmon is cooked through.

‍ ‍4.     Remove the salmon from the oven and unwrap the baking paper. Serve with salad leaves, chopped olives, sundried tomatoes, capers and chopped artichoke.
