INGREDIENTS

  • ⅓ cup olive-oil plant-based margarine

  • ½ cup sugar

  • ⅓ cup water

  • 1 ½ cup mashed banana

  • ¼ cup water

  • ¼ cup unsweetened applesauce

  • 1 tsp baking soda

  • ¼ tsp baking powder

  • 1 tsp xanthan gum

  • 1 ⅔ cup nut-free gluten-free flour mix

  • 2 tsp cinnamon (optional)

  • ½ cup add-ins (optional) – chopped dates, raisins, 70% vegan dark chocolate chips
     

METHOD

1.    Preheat oven to 180°C. Line a medium loaf pan.

2.    Cream margarine and sugar using a whisk. Stir in ⅓ cup water and banana. After combined, add the applesauce. Lightly fold in the dry ingredients. After batter is ready, you can fold in add-ins if wanted.

3.    Bake in for 30-50 min. If making muffins, it would bake for about 18-20 min.

 

Meal Planning Hack! You can freeze extras for a month. When ready to eat, preheat oven and heat from frozen for 10-15 min.
